Winter Squash has many culinary uses including pumpkin pie, biscuits, bread, pudding, beverage and soups. It is very nutritious  and provides a range of health benefits. 

Squashes are rich in beta carotene which not only is a powerful antioxidant but also converts into vitamin A which is beneficial to the good health of your eyes and skin.  Their  fiber, potassium and vitamin C contents also make them very good for the heart

Within Haitian communities, the soup Joumou (Pumpkin Soup) is consumed every January 1st to commemorate the declaration of Haiti’s independence. Therefore it is safe to say that a vast majority of Haitians start their year with a bowl of soup  Joumou.
